My husband hates onions. I have to disguise them in everything I cook. Well, it’s hard to disguise chopped red onions in a caprese salad; so, I came up with delicious substitutions and a bite-sized format that can make this a backyard summer go to salad with a twist!

Basic ingredients

Ready to mix!

Directions:

  1. Slice and de-seed the tomatoes, then chop into bite size pieces
  2. Slice and de-seed the cucumbers, then chop to bite-size pieces
  3. Mix the tomatoes and cucumber, then add mozzarella pearls.
  4. Toss the entire mixture (and any of the optional ingredients except the greens) with the olive oil and balsamic dressing.
  5. Let sit 30 minutes in the refrigerator before serving.
  6. If adding greens, place at bottom of bowl and toss mixture on top to serve.
  7. Enjoy!
