Did you know that a cucumber is actually a fruit, not a vegetable like most people think? It’s true and they hold an incredibly healthy dose of antioxidants and fiber. My youngest daughter says they taste like “nothing” and have a yucky texture. I disagree. I think they have a nice clean, refreshing taste and can be easily added to so many recipes. They are not only high in water content and soluble fiber, but actually promote hydration and can aid in weight loss.

So why should you choose to add cucumbers to your plate?

  1. They are low in calories and full of nutrients including magnesium, potassium and manganese. Cucumbers are best eaten with the peel left on. This helps retain the fiber as well as many nutrients.
  2. They are full of antioxidants. Antioxidants help decrease the number of free radicals in your body that can lead to cancer, heart disease and many autoimmune diseases. Cucumbers have been shown to be high in flavonoids and tannins, which are especially helpful at blocking harmful free radicals.
  3. They promote hydration. Yes, that wonderful hydration! A cucumber is 96% water and definitely can help your hydration status. Good hydration can affect everything from physical performance, temperature regulation, and metabolism. A well hydrated body is a well-oiled machine!
  4. They can aid in weight regulation and weight loss. Of course, since they are 96% water, cucumbers are low in calories and fill you up. You can substitute them in many dishes instead of higher calorie ingredients.
  5. They may aid in blood sugar regulation. Many animal studies have shown cucumbers can effectively reduce and control blood sugar levels. Most studies have been done with cucumber peels, so more research is necessary but looks promising. Another vote for the food as medicine movement!
  6. They can help you be more “regular”. Yes, potty talk time! Dehydration is linked with constipation. Cucumbers not only have a high water content but contain pectin which is a soluble fiber that improves regularity.
  7. They are a yummy addition to your plate! I know my youngest daughter disagrees, but she’s still thinks chicken nuggets are real food! Cucumbers are so easily added to your diet. Add them to salads, float them in your water, eat with hummus instead of chips, and even add to your sandwiches.

So, gang that’s seven good reasons to eat cucumbers! They are deliciously nutritious, low in calories and high in water with lots of vitamins and minerals as a bonus! Say Yes to cucumbers! And if you are in Sasha’s camp (my youngest daughter) and just don’t like the texture, you can add cucumbers to your diet by adding a cucumber extract to your morning smoothie! A win:win.
