It’s What’s For Dinner! A nice, light shrimp dish served with quinoa or couscous for a delicious but healthy dinner!

Ingredients:

Directions:

Preheat oven to 400 degrees

  1. Prepare quinoa or couscous per package instructions, removed from heat.
  2. Add parsley to your grains
  3. Rinse and dry shrimp. Drizzle with 1 Tbsp olive oil and place on baking sheet. Bake for 8 minutes.
  4. In a large skillet, combine 1 Tbsp olive oil, garlic, orange juice and zest, lemon juice, balsamic vinegar, white wine and honey. Mix under medium to low heat.
  5. Increase heat to high and bring to a boil, then simmer over medium to high heat until thickened. About 10 minutes.
  6. Toss baked shrimp balsamic citrus glaze. Let sit 2 minutes prior to serving.
  7. Serve with quinoa or couscous as well as a garden salad.

Serves 2-4 people.
