Looking for a slightly different, but healthy way to prepare salmon? Here’s an easy recipe for your grill or broiler.

Ingredients:

Directions:

  1. Zest then collect lime juice (3 Tbsp of juice)
  2. Peel, then grate ginger root. 1 tsp minimum.
  3. In a small bowl, whisk together all the ingredients except the salmon.
  4. Pat the salmon fillets dry with a paper towel.
  5. In a shallow pie plate, put ¾ of the marinade; then place the salmon skin up in the marinade and let sit for 10 minutes.
  6. Place the salmon, skin down, on a baking sheet, apply the remaining marinade and broil (about 6 inches from the heat source) or grill for 7-10 minutes.
  7. Serve immediately

This salmon goes well with rice or a green salad. 

Serves 4.

For an even easier but a little spicier version, use this premade chili, lime and ginger marinade. Even though it is packaged for pork, it’s great on fish too!
