I’m always trying to find healthy fish recipes to try on my husband (who is not a fan!) He loves this cod because it “doesn’t taste like fish”. This is a great way to add a new variety of lean protein to your diet! And it’s simple and easy to prepare.

Ingredients:

Instructions:

  1. Preheat oven to 400 degrees
  2. Mix 3 Tbsp olive oil, 5 Tbsp lemon juice and 2 Tbsp melted butter in a shallow glass dish. Set aside.
  3. Mix flour (or breadcrumbs), coriander, cumin and paprika with a dash of salt and pepper.
  4. Pat cod fillets dry with paper towel.
  5. Dip cod filet in the butter mixture then coat with flour mixture.
  6. Heat 2 Tbsp olive oil on medium-high in a medium skillet.
  7. Sear each side of the filets for about 2 minutes, then remove from heat.
  8. Add the minced garlic to the remaining butter mixture.
  9. In a baking pan, add the cod fillets then drizzle them with the remaining garlic and butter mixture.
  10. Bake for 10 minutes or until they flake easily with a fork.
  11. Serve immediately!

This can be served with couscous and a vegetable or a Greek salad. Serves 3-4 people.
