Refreshing Cold Summer Soup

I love slightly spicy gazpacho with Caprese Salad reformatted and nice piece of grilled chicken or fish on a hot summer night.

Yummy!

Simple to make. Refreshing with just a hint of spice. Goes with pasta, fish or chicken.

Ingredients:

  1. 3 cups peeled and seeded tomatoes, chopped 
  2. ½ cup green bell pepper, chopped
  3. ½ cup red onion, chopped (or 1 Tbsp onion powder)
  4. 1 cup English cucumber, peeled and chopped
  5. 1 jalapeño, chopped fine
  6. 1 clove garlic, minced
  7. 1 Tbsp chopped parsley
  8. ¼ cup olive oil
  9. 2 Tbsp red wine vinegar
  10. 1 Tbsp Worcestershire sauce
  11. ½ Tbsp smoked paprika
  12. 1 tsp hot sauce
  13. 1 tsp lemon juice

Directions:

  1. Mix ingredients.
  2. Blend in Cuisinart food processor for 3 minutes.
  3. Chill in refrigerator for 30 minutes prior to serving.
