It’s What’s for Dinner!

This delicious recipe is low-carb and includes fresh cilantro which is a natural blood cleanser, and acts as a diuretic helping you shed excessive water weight and lose the bloat!

Ingredients: (Serves 6)

Optional: 5 cups spiralized zucchini noodles (about 3 med zucchinis) for low carb version or 1 box (14 oz) Thai stir fry rice noodles.

Directions:

  1. Combine curry powder, turmeric, cayenne pepper, ginger, black pepper, coconut milk, almond butter and coconut aminos in your slow cooker and stir well to mix.
  2. Add bell pepper, onion, and cilantro.
  3. Place chicken pieces in curry sauce and cook on low for 4 hours or until chicken is thoroughly cooked and tender. 
  4. Saute zucchini noodles for 5 minutes with 1tbsp olive oil or cook the rice noodles as per package instructions.
  5. Let sit for 15 minutes before serving over your choice of noodles.

If you need to make this nut-free, you can swap out the almond butter and use sunflower seed butter.
